GEA is an enormous processing equipment group that includes previous independent processors such as Westfalia, Wiegand, APV Kestner and Niro from the days when I still worked in processing.

This website is that of the separator, decanter and process line part of their business. It presents a wealth of general information on many beverage and dairy processes with links to their equipment pamphlets. Each process is described in detail with a process flowsheet.

While you might be tempted to dismiss this as a source of information because of it equipment supplier link, I believe the information is general enough and unbiased to be useful.

 

AJFAND Free Online Research Results

A very detailed and well executed investigation of a very simple method for cooling of camel milk in traditional transport in Kenya.

The simple step of wrapping plastic containers in moist burlap improved the milks shelflife.

By the way a scary statistic, for milk producers in modern industries, the study found that, on average, milk “took 7.4 hr to cover 80 km to market”.

The World’s Largest Milk Dryer Goes on Line

This spray dryer costing US$ 212 and with a capacity of 27 tons of milk powder an hour was recently commissioned by Fonterra in Edendale, New Zealand. The dryer can process 100 litres of milk into 10kg of whole milk powder in just over one second. It needs to be fed 4.4 million litres of milk a day which requires around a 160 000 cow heard.

Liquid Dairy Products (LDPs) – Markets in Developing World

The graph below shows the world sales of LDPs until 2008 and projections for consumption until 2012, that were made in mid 2009 by Tetra Pak. This information is contained in Issue 1 of the Tetra Pak Dairy Index – A biannual news and information source about the dairy industry.

Interesting as well as the growth in total consumption, is the apparent growth in powder and ambient ready to drink milk (RTD) or essentially long-life packaged milks. The report states that:

India has 300 million head of dairy cattle — roughly 1/5 of the world’s total bovine population. However, most of these cows belong to farmers in small villages, whose entire herd comprises two to three animals
Every day: 70 million farmers milk 105 million cows in 50,000 villages and the national milk grid transports the milk (an average of 1-2 litres per farmer) to more than 700,000 cities in India

This is a real tribute to a milk collection and distribution system, that is co-operative based and has its origins some 40 years ago.

The manual starts off with a discussion of how to identify a market, test its feasibility, serve it and maintain customers and where and how to set up the milk processing plant. Only then are processes and technologies discussed. The manual ends with sections on quality assurance & legislation and planning and managing production and finances.

All the sections of the manual contain practical calculations, tips for success, case studies, chapter summaries and checklists, which help to make the material real and reinforce the learning process.

Valuable practical information including a bibliography, a list of Institutions offering support to small-scale processors, a glossary and a list of acronyms can be found in the appendix.
