Ice Pigs in Food Processing?

Talking of pigs in a food processing plant brings to mind an abattoir or a plant in a really sad state of cleanliness. However, this pig is actually behind new operations in Food Processing that improve hygine while saving capacity, chemical, product and water. The principle is explained in this video

I remember first hearing of pipeline pigs when the petroleum pipeline from Durban to Johannesburg was installed. This was basically a rigid plug with the diameter of the pipeline that is pumped through the pipeline between two different fluids. The novelty here is a flexible plug which can even separate fluids in a heat exchanger. The second video demonstrates the process although the transition back to process flow is somewhat spoiled by a demo failure.

While both this videos feature the Food Process Engineering company GEA, this is not to imply they are the only or a preferred supplier. The links below are to other online starting points, but it would be wise to approach your suppliers for further information.

High Pressure Processing

I have posted information on High Pressure Processing (HPP) before covering the process, linking to a factsheet and describing a product. HPP is a relatively new process that has advantages in the consumer preference for freshness and health that have been developing recently.

This article gives a few of the major points found in a recent market investigation.

  • The USA is the leading market for HPP products
  • The East, although an attractive market, has certain constraints based on consumer habits
  • Equipment sales are projected to reach $600 million by 2018
  • Product sales are expected to reach 2,2 billion in the same year
  • Beverages, ready to eat meals, raw proteins and raw pet food have been the successful products to date.

Is this the next big thing in African Food Processing? – I doubt it is likely to become a widely used technology. We still need to catch up with more standard capital intensive technologies as our middle class develops and demands more quality.

However, where we are developing new markets for the indigenous plants of Africa, there is surely an opportunity for HPP to retain flavours and beneficial chemicals tahtt will appeal to wealthy consumers.

The information is broad ranging from simple description of the different positive deplacement pump technologies, through application notes to a database of liquids and specifications for the pump required to pump them.

Having recently done some examining, in which one of the question was on NPSH and cavitation it was clear that this site's four page pdf would have been very useful.

Heat Excahangers – Free Online Information

In a previous post I said that equipment suppliers often supply useful technological information which is not necessarily tied to their equipment.

If you are looking for technical information on heat exchangers for the food industry here is a good place.

This gives you access to an impressive 15 page chapter from the Tetra Pak Dairy Processing Handbook covering uses of heat exchangers, pasteurisation, sterilisation, heat transfer mechanisms, design equations and equipment options.

The complete manual of 440 pages and 600 illustrations costs $80, but there appear to be quite a few free extracts (Tetra Pak has six on its page for the book) online. Some educational institutions provide the manual free of charge for students.
