Processing Fruit & Vegetables

UNIDO is the United Nations body tasked with industrial development. They have been active in promoting the introduction of small scale processing in Developing Countries.

In this work they have developed very useful materials which are available online. One of these is Small-scale Fruit and Vegetable Processing and Products; Production Methods, Equipment and Quality Assurance Practiceswhich is written by Peter Fellows. The book is 105 pages long and absolutely comprehensive. In the format of his other similar books Peter covers practical issues such as building layout, yield calculations, scheduling some of which are illustrated below by extracts from the book as well as the critical issues of quality and safety and the management thereof:

This clearly a very practical book that is an excellent rewference manual for a food processing entrepreneur.
